Starters

Mixed Mushroom Stuffing

Why is it special? 

A juicy platter that contains loads of nutrition. A punch of pecans, hazelnuts, with a dash of parsley makes the recipe susceptible. When stuffed with mushrooms, it makes the recipe so enriching. Taken fresh out of the oven, the dish will be famished from the plates in no time.  

Ingredients

  • 2 shallots
  • 4 cloves of garlic
  • 350g mixed wild mushrooms
  • 400g closed-cup or chestnut mushrooms
  • ½ a bunch of fresh thyme
  • 350g stale bread
  • 100g pecans or hazelnuts
  • 1 bunch of fresh flat-leaf parsley
  • 25g dried porcini
  • 80ml olive oil
  • 2 fresh bay leaves

How to prepare? 

Step 1: finely chop shallots, garlic, and lightly toast the nuts. Cover the porcini with boiling water and leave aside to simmer in the boiling water. 

Step 2: Heat the oil in a large, wide pan and add the shallot and garlic. Add the mushroom when the shallots are cooked. Throw in bay leaves, the chestnut mushroom has softened, and throw in the diced bread. 

Step 3: When mushrooms are tender and browned, add in a pinch of sea salt and combine well. Add more of the parsley and place in the oven for 35 minutes at 190 degrees centigrade.

Chestnut & sage stuffing balls 

Why is it special? 

Stuffing is the favorite part of any Christmas dinner. It screams family time, and the smell of sage and roasting chestnuts is important for the Christmas experience. But the interesting part of this dish is that it is quick to prepare and can be enjoyed near the fireplace, and equally, a core dish for any Christmas dinner spread. 

Ingredients

  • 160g chestnuts
  • Glug of vegetable oil
  • 1 large onion, finely chopped
  • 1 tbsp sage
  • ½ tbsp rosemary
  • 80g breadcrumbs
  • Salt and pepper

How to make?

Step 1: Preheat the oven and score each of the chestnuts onto a baking tray for 10 minutes. Remove the chestnuts while still warm and finely chop them. 

Step 2: In a frying pan, add the vegetable oil followed by chopped onion, sage, rosemary, chestnuts, salt, and pepper. 

Step 3: Bake the above mixture in the oven after shaping it into balls. 

Main Courses

1. Potato and Mushroom Gratin with Brie

Why is it special?

The only thing that makes it special and loved by the masses is its cheesy flavour without adding the cheese. It is heart-warming, soul-nourishing, and the garlicy mushrooms, which melt in your mouth, make it finger-licking delicious.

  • mushrooms
  • potatoes
  • brie cheese
  • cream
  • fresh parsley 
  • vegetable stock – or just use sea salt if you prefer!
  • Garlic – Use fresh minced garlic. It takes time, but the dish smells heavenly. 
  • dried thyme
  • nutmeg

How to make? 

Step 1: Saute mushrooms in heated oil over medium heat make it soft. Now add flavorings such as garlic, thyme, pepper, nutmeg, and crumbled stock cube. Cook this for a few minutes. 

Step 2: Now, prep potatoes by peeling and thinly slicing them. Prepare the cream sauce on the side with butter and cream. Now comes our favorite part, which is layering the baking dish.

Step 3:  Spread 2-3 tbsp cream on the bottom, add one-third of the bottom slices, add half the layer of creamy mushrooms, add another third of potatoes, and add sliced Brie with the remaining final potatoes in the end. Top it with leftover cream and remaining mushrooms. Bake this in a preheated oven at 190 degrees centigrade. 

2. Fried rice with kale, squash & chestnuts (vegetarian)

What is it special about? 

A fulfilling Christmas recipes vegetables that demands a step-by-step process, and it is a healthy version of fried rice. Add in kale, squash, and you would not have to worry about the extra calories you are putting on. A quick and simple recipe which is nourishing and a personal favorite among kids, after the dessert section, of course. 

Ingredients

  • 200g mixed basmati and wild rice
  • 1 onion
  • 1 medium squash or pumpkin
  • 1-2 fresh red chillies
  • 150g cooked chestnuts
  • 2 cloves of garlic
  • 200g curly kale
  • 1 bunch of fresh flat-leaf parsley
  • olive oil
  • 1 stick of cinnamon
  • 2 cloves

How to make? 

Step 1: Cook the rice and then peel and chop the squash, onion, and chillies into pieces. Also, roughly chop the kale and garlic. 

Step 2: Add oil to a pan and add the prepared onions. After softening, add in the prepared rice and let that fry for over sometime. Add in the rest of the ingredients. 

Step 3: crank up the heat while stirring the rice, letting the rice get crisp. 

Dessert

White Chocolate Pomegranate Cheesecake

What is it special about?

A personal favorite and deserves to be the centerpiece at any holiday dinner. If we say more about it, there is a good chance we will break the charm. Try it out and you will thank us later. 

Ingredients

  • 7 oz gingersnap cookies, finely crushed (1 1/2 cups)
  • 6 Tbsp unsalted butter, 
  • 3/4 cup, plus 2 1/2 Tbsp granulated sugar
  • 1 tsp kosher salt
  • 3 8-oz packages of cream cheese, at room temperature
  • 3 large eggs, at room temperature
  • 2/3 cup sour cream
  • 7 oz white chocolate, 
  • 1 tbsp cornstarch (divided)
  • 1 1/2 cups pomegranate juice

How to prepare? 

Step 1: Preheat oven and stir together crushed cookies with butter and one tbsp og sugar and a pinch of salt in a bowl. In another bowl, beat cream cheese with eggs until smooth. Add sour cream, melted chocolate. 

Step 2: Pour filling into the cookie crust, which was made in a pan, and bake for 50 to 60 minutes. Refrigerate for 12 hours. Stir together water, corn starch, sugar, and salt. It should be reduced to half and should coat the back of the spoon.

Step 3: Now stir in the butter cream into the mixture and decorate with powdered sugar on top of it. Enjoy the best dessert of Christmas.
